Lima Bean Soup Recipe

Ingredients

Frozen lima beans

Sliced carrots

Olive oil

Green onions, finely chopped

Chopped mushrooms

Black pepper

Soy sauce

Directions

  1. Cook lima beans in water according to packet instructions.
  2. Steam carrots till tender.
  3. Drain reserving cooking water.
  4. Heat oil in a skillet & saute green onions & mushrooms until tender.
  5. Add spices & saute for a further 1 minute.
  6. Combine all ingredients (except milk) along with 1 cup of bean & carrot water.
  7. Using a blender, blend in batches till smooth.
  8. Pour mixture into a large soup pot.
  9. Add milk.
  10. Cook slowly for 15 to 20 minutes.
