Canyon Ranch Garlic Soup Recipe

Ingredients

Chicken broth

Large tomato, peeled, seeded

Black pepper to taste

Egg whites

Large garlic cloves, peeled

Salt, optional

Thyme

c
Grated Monterey Jack cheese

Directions

  1. Pour 1 cup broth into a large saucepan; add garlic; bring to a boil.
  2. Cover; simmer 15 minutes.
  3. Pour into a blender.
  4. Add tomato, salt, pepper and thyme; blend until smooth.
  5. Return blended mixture to pan; add remaining broth.
  6. Bring to a boil.
  7. Simmer, uncovered 15 minutes.
  8. Beat egg whites with a fork until frothy; gradually add to soup.
  9. Mix well; cook five minutes more.
  10. Ladle into bowls; sprinkle each serving with 1 tablespoon cheese.
